Finding time to cook when in college can be hard. This does not, however, mean that you should always stick to instant noodles every night. The one pot pasta comes into place here – a tasty meal that does not involve much hassle; you prepare it using only one pot and with a little effort. Whether you have a microwave, induction cooker or even an electric kettle, this one pot pasta recipe is meant for you. Particularly designed for busy college students this dish is quick to make, easy to prepare and needs little cleaning up.
Ingredients
- 200g pasta (any type you like)
- 1 cup cherry tomatoes, halved
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 2 cups spinach
- 3 cups vegetable broth (or water)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)

Recipe for One Pot Pasta
1. Preparation
First chop onion, garlic, bell pepper and zucchini. Halve the cherry tomatoes and have your spinach at hand. By having everything ready you would make even easier cooking of your one pot pasta.
2. Boiling Pasta
Add the pasta to the pot filled with water and bring it to a boil. Boil the one pot pasta for around 9 minutes until it’s perfectly cooked.
3. Getting Vegetables Ready
Use a big pot to heat olive oil at medium heat. Then add previously chopped garlic and onions, cooking until fragrant and soft, approximately two or three minutes to start your one pot pasta.

Add bell pepper, zucchini, and cherry tomatoes into the pot. Allow them to cook for another 3-4 minutes until they soften. Pour in vegetable broth or water, and bring it to a boil for the one pot pasta.
5. Adding the pasta
Add the pasta to the pot and stir intermittently to prevent the one pot pasta from sticking; otherwise, it will clump together.
6. Cook Everything Together
Leave the entire mixture in the broth with the vegetables while cooking one pot pasta. As the pasta cooks, it will soak up the flavours of the vegetables and broth, forming a delicious sauce. Depending on the type of noodle, this may take anywhere from 10 to 12 minutes.
7. Finish with Spinach and Seasoning:
When the one pot pasta is almost ready and most of the liquid has been absorbed, add spinach to the pot. Stir well until the spinach wilts. Season with oregano, basil, salt, and pepper.
8. Serve and enjoy
Once the one pot pasta is cooked to your liking and the sauce has thickened, your one pot pasta is ready to serve. Dish it up directly from the pot, and if you like, top it with grated Parmesan cheese.
